4 Boneless chicken breasts - cooked and diced
2 cups broccoli flowerettes
1 can cream of chicken soup
1/2 cup milk
1/2 cup salad dressing or mayonnaise
1 cup cheddar cheese - grated
1 tsp. lemon juice
1/2 cup parmesan cheese or seasoned bread crumbs
cooked rice (optional)
Need 3 pots: 1 to cook chicken, 1 to steam broccoli, 1 to prepare sauce.
Boil chicken breasts in water for about 30 minutes or until tender (you may add a bay leaf). Drain and dice. Steam broccoli for about 10 minutes. For sauce, combine chicken soup, milk, salad dressing and cheddar cheese. Keep stirring until the cheese is melted and the sauce is smooth. Remove from heat and add lemon juice. In 9 X13 pan layer broccoli, then chicken, then sauce. Top with parmesan or bread crumbs. Bake at 350 degrees for 25 minutes until the cheese is not runny and the top is browned. Can serve over cooked rice.
